Slow Cooker Corned Beef and Cabbage

I've been making this corned beef and cabbage every year for the hubby on Saint Patrick's Day. It's the closest to Irish food that we get and it's an easy fool proof recipe! For the past few years I have been making it in the slow cooker, and would never go back to the oven. I throw it all day, and in the evening dinner was ready for us. I cook my roast on high for 8 hours and it was fall a part tender and completely perfect!




Place your corned beef roast into your slow cooker and rub on spices that came with the roast. Place diced potatoes and carrots on top. I added about a cup of water and then let it cook on high for 6 hours before I added the cabbage. This way you don't get really soggy and mushy cabbage. I let it finish cooking for 2 more hours on high. The roast came out super tender and stringy, it was perfect! Everyone enjoyed the meal and we got to make some fun Saint Patrick's Day crafts with the boys while our dinner was cooking!

Ingredients:
- Corned beef roast, 10lbs
- Potatoes, 5 large 
-Carrots, 6-7 medium 
- Yellow onion, 1
- Cabbage, 1 head 
- Water, 2 cup

Directions:
1. Place corned beef into slow cooker and rub seasoning on top. 
2. Peel and cut carrots and cut potatoes and place around roast. Cook on high for 6 hours. 
3. Cut and place cabbage on the top and allow to cook 2 more hours on high. Serve and enjoy!
